Peri Peri Beans & Barley

Peri peri was created by Portuguese explorers in Mozambique, and was first called “piri-piri” —meaning “pepper-pepper!” While it is made from spicy chili peppers, citrus and earthy spices bring balance to the flavor.
Tips
Parsnips:Feel free to use red skinned potatoes, instead.
White Beans:Feel free to use red beans, instead.
Kale:Feel free to use collard greens, instead.
Fresh Thyme:If desired, use dried thyme (use ¼ the amount of suggested fresh thyme).
Fresno Chile:Feel free to substitute bell pepper (¼ bell pepper per serving), if you do not want a spicy dish.
