Kimchi Noodle Salad

Ingredients

  • pound brown rice noodles
  • cup chopped cabbage kimchi
  • tablespoon gochujang
  • cup mung bean sprouts
  • piece green onions (white and green parts), thinly sliced
  • piece medium cucumber, halved, seeded and thinly sliced
  • tablespoon sesame seeds, toasted

Instructions

  1. Place the rice noodles, kimchi, gochujang, and mung bean sprouts in a large bowl and mix well.
  2. To serve, divide the mixture between four individual plates and garnish each with the green onions, cucumber slices, and sesame seeds.
