Ingredients
- piece small onions, finely chopped
- piece carrots, finely chopped
- piece small white potatoes, finely chopped
- ounce brown lentils
- can diced fire-roasted tomatoes
- cup vegetable broth or water
- cup finely chopped fresh spinach
- pinch Salt and pepper
Instructions
- Combine all ingredients except the spinach in a soup pot or Dutch oven. Cook over low heat for 2 hours.
- Add the spinach and cook about 5 minutes more, until spinach is wilted. Season to taste with salt and pepper.
