Lentil Vegetable Soup

Ingredients

  • piece small onions, finely chopped
  • piece carrots, finely chopped
  • piece small white potatoes, finely chopped
  • ounce brown lentils
  • can diced fire-roasted tomatoes
  • cup vegetable broth or water
  • cup finely chopped fresh spinach
  • pinch Salt and pepper

Instructions

  1. Combine all ingredients except the spinach in a soup pot or Dutch oven. Cook over low heat for 2 hours.
  2. Add the spinach and cook about 5 minutes more, until spinach is wilted. Season to taste with salt and pepper.
