Oven-Baked Chickpea Ratatouille

Ingredients

  • cup cooked chickpeas
  • cup red onion, finely chopped
  • piece medium-large cloves garlic, minced
  • can diced tomatoes
  • cup red or orange bell pepper, diced
  • tablespoon apple cider vinegar
  • tablespoon freshly grated ginger
  • teaspoon pure maple syrup or agave nectar
  • teaspoon mustard seeds
  • teaspoon dried basil
  • teaspoon dried oregano
  • teaspoon dried rosemary
  • teaspoon sea salt
  • teaspoon allspice
  • piece freshly ground black pepper
  • piece dried bay leaves

Instructions

  1. Preheat oven to 400° F.
  2. In a large, deep casserole dish, combine all ingredients except bay leaves. Stir through until well combined, then embed bay leaves in the mixture.  
  3. Cover and bake for 30 minutes. Stir through, cover, and bake for another 35-45 minutes, until onions are tender and translucent (stir through once more during baking). Remove bay leaves and serve over quinoa or brown rice. Makes 4-5 servings.
