Red Lentil Chili

Ingredients

  • ounce dates
  • pound red lentils
  • cup water
  • can salt-free diced tomatoes
  • can salt-free tomato paste
  • ounce chopped onion
  • pound red bell pepper, finely chopped
  • clove garlic, finely minced
  • tablespoon apple cider vinegar
  • tablespoon dried parsley
  • tablespoon dried oregano
  • tablespoon salt-free chili powder
  • teaspoon smoked paprika
  • teaspoon chipotle powder
  • teaspoon crushed red pepper flakes
  • bunch scallions
  • Faux Parmesan

Instructions

  1. Blend the dates in one cup of the water until smooth. (I like to use the food processor so it’s almost a puree.)
  2. Place all remaining ingredients in an electric pressure cooker and cook on high for 10 minutes; let pressure release naturally or quick release. Alternatively, place all ingredients in a slow cooker (with 6 cups water) and cook on low for 8 hours.
  3. Sprinkle with chopped scallions and serve with baked tortilla chips or over a baked potato.
