Instructions

  1. To prepare the stew, place the soaked beans in a large saucepan. Add the leeks, garlic, and 3 cups water.
  2. Bring to a boil, then reduce the heat to medium and simmer, partially covered, until the beans are just tender, for 15 to 20 minutes.
  3. Add the carrots, green beans, cauliflower, tomatoes, bell pepper, Italian seasoning, and chili powder. Cook until the beans and vegetables are completely cooked, for 15 to 20 minutes.
  4. Add the vinegar and add salt to taste. Cook for 2 to 3 minutes.
  5. Ladle some hot stew over baked potatoes or steamed grains and serve hot.
